A while back I had tried to bake pepperoni into a chip like texture. I could not seem to get it right no matter how many different temperatures or cooking times I tried. They just never came out how I expected. Basically ruined the whole thing for me.
While Stella and I were making Parmesan Jalapeno Chips her mom had stopped over to drop off a fire tool set she had found for my mother at an estate sale. While she was visiting the subject of the pepperoni chips came out. Stella thought maybe if she baked the pepperoni on some sliced cheese they would turn out the way we were expecting.
Holy buckets was she right! We were we blown away! These taste so much like pizza I was just shocked. So much more impressive than when I tried doing just the pepperoni in the oven.
- Sliced Cheese – 1 package
- Pepperoni – 44 EA
These are even easier to make than the Parmesan Jalapeno Chips, and in my opinion cheaper to make. We purchase almost all of our cheese from Aldi. To me, their cheese is amazing and economical, especially to those doing Keto. We specifically used the Happy Farms Sliced Swiss Cheese.
Preheat your oven to 350°. Slice the cheese into 4 squares and place 1 inch apart on a parchment lined cookie sheet. Lay the pepperoni on top of the cheese. Bake for 8-10 minutes. Remove from oven to cool. I patted ours with some paper towels to soak up some of the grease.
The longer the chips are in the oven the crunchier they get. We started with a couple of batches of chips baked at 7 minutes. These resulted in a more chewier chip. The next few batches we made we baked at 10 minutes. Once completed we taste tested them side by side. The chewier chips tasted more like a thin crust Dominos pepperoni pizza. The crispier chips would do amazing with a nice dip like ranch or as we discovered Top the Tator.

- Cut each slice of cheese into 4 squares.
- Place cheese slice 1 inch apart.
- Place a slice of pepperoni on each slice of cheese.
- Bake for 8-10 minutes. – For crunchier chips cook longer.

- Transfer to a paper towel to soak up the grease.
