The weather is starting to get cooler around Minnesota now that we have reached Fall.
I’ve never been much of a soup fan other than Ramen Noodles as a kid. As an adult I am learning to love and appreciate soups and actually crave them. One of my all time favorite soups is French Onion.
Every Wednesday from September to April, Stella and I bowl with a couple of my sisters and our friend Jill. Bowling nights can be REAL LONG. Sometimes we won’t get home until 11 pm or later without eating anything but drinking enough to knock out an ox. So with that being said… I am prepping this soup on Monday night as I seem to have more free time on Monday nights than Tuesdays. So I will prep everything, toss it in the crock pot where it will sit until Wednesday afternoon. Feel free to eat yours right off the stove. The longer it sits with the bay leaf the better it will be.
Let’s start with the ingredients:
- Onions – 5 Large
- Beef Broth – 8 Cups
- Chicken Broth – 1 Cup
- Butter – 1/2 Stick – More for a creamier soup
- Garlic – 2+ cloves – Minced
- Bay Leaf – 1 to 2
- Salt – 3/4 tsp
- Pepper – 1/2 tsp
- Crouton’s or crusty day old baguette – To make this GF use GF bread or omit bread all together.
- Swiss/Provolone/ Gruyère Cheese – Whichever your preference
Directions:
- Turn stove to medium heat. Using a large pot add butter and garlic.
- Once melted add the cut onions. Let simmer until the onions are opaque.
- Add Beef, Chicken Broth and the bay leaf than bring to a boil.
- Boil for 10 minutes.
At this point you can move the soup to a Crockpot and cook on High or Low depending on your schedule. Or you can toss it into oven safe bowl/soup crock, add the crouton’s/bread cover with two slices of cheese and broil on high until the cheese is melted to your liking.

Author Side Note: For the ingredients above I have decreased the required butter from a stick to half a stick. The color of the soup above is with 1 stick. The soup turned out creamier than I would have preferred, still delicious nonetheless.
